Green Beans and a Swap
We are into Green Bean picking season . . . and my mouth waters every time I see them. Today, I must have cleaned two or three pounds of beans, snapped them and added red potatoes, onions and Polish Kielbasa to the beans. Now, they are "boiling./simmering? for about three hours until the flavors have molded together in one of my comfort food memories from childhood.
Normally, I make about a pound of beans for the husband and I, but I wanted to make enough to take some across the street to the newborns parents and brother. His momma made a comment about thanking everyone for everything they have done for her, specially the meals.
With the 1st son's birth, we had food over at the beginning. She said she froze those meals (we made two things meant to be frozen . . . because they both get better every time you reheat them.) Then, when her mother and mother-in-law left (2 weeks worth of help), she would have something to pull out of the fridge on those evenings when she has had a hectic day.
This time, we are planning on the beans, potatoes, onions and sausage (everything cut into bite sized pieces for the 2 year old) and nachos. For the nachos, we are taking them the hamburger cooked and lightly seasoned, a bag of Tostitos Scoops, some salsa from our local grocery that is almost as good as homemade . . just tomatoes, green peppers and sweet onions . . . a bag of shredded cheese and a small container of sour cream. If we are lucky, they will get at least two meals, and maybe more, out of everything.
Oh, I told the husband we should take some baking potatoes so they can use the leftover sour cream with them.
I have been busily working on a swap gift for Ravelry's Beverooni1 ( her blog is One Yarn After Another.) I S-O-O-O-O-O-O-O-O want to post pictures of what I'm making her . . the topic of the swap is "Everything Fall." I am making something from an idea in my head . . . so far, so good!
Just went out to take "bean" pictures . . . my mouth is watering to eat this. All I need is a bowl and some ketchup for the meat . . and some gets on the potatoes and beans which is even better. But, I have to wait until tomorrow . . this is another one of those foods that tastes better the 2nd, 3rd, and if lucky, 4th days it is re-heated! ! ! ! !
